As part of any seafood industry, freshness and quality have been the primary challenges to overcome. Therefore, in the middle of every August when the saury population is at its peak, a major fishing perimeter is set up in the waters off the coast of Nemuro city with close proximity to the Hanasaki landing port. The annual routine is to harvest by night and deliver to the nearest port by the next morning. This period of time also marks the southern migration for these fishes, hence they have accumulated a good amount of fat content which is highly nutritional. In order to retain the best freshness and quality, the fishermen have made a conscious effort to adopt various approaches to pack, store and transport the fishes effectively.
saury brings great health benefits through its high content of fish oil,
containing eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA). These
omega-3 fatty acids are said to aid in the prevention of lifestyle-related
diseases such as myocardial infarction and cerebral infarction. Furthermore,
medical studies have revealed that DHA strengthens memory and delays the ageing
process. Other sources have shown that EPA and DHA have the ability to combat
obesity and cancer. Other fat-soluble vitamins such as Vitamin A, D and E can
also be found in the fish.

Nemuro is the easternmost city of Japan, located in Hokkaido region and most famous for its glorious sunrise view, fresh seafood, and diverse wildlife. The word ‘Nemuro’ is derived from the native Ainu language ‘Nimuoro’ which refers to a place where trees grow in abundance.
